Planetbox lunch boxes

So, I discovered the best lunch boxes EVER! They are from planetbox.com! (No I am not getting paid to advertise these.) They have just the right portion for them and they can have a ton of different items! They also have fun magnets you can either put inside or outside.
 
In this one I made ham sandwiches with spinach, crackers with peanut butter, baby bell cheese, carrots (in the small tin is ranch) and strawberries!

This one is an attempted closed turkey sandwich, strawberries and grapes, boiled eggs and two fortune cookies.

Tuna in a tin with cracker and cheese for "homemade" lunchable with strawberries, a chocolate and some chocolate covered pretzels on the side.

 
Again the BEST lunch boxes ever! They also have a lunch carry case!

Mini Corn Dogs



 What kid doesn't like corn dogs?! I make my kids lunches for school and was running out of ideas. My sister suggested mini corn dogs and they are so simple!

You will need:
Corn muffin mix
About 3 hots dogs
Mini Muffin pan

Preheat oven to 400 degrees. Follow the directions on the muffin box. Next cut up small slices of the hot dogs and place them in a well greased mini muffin pan. Scoop small amounts of the muffin batter onto the hot dogs. Just enough that covers the hot dog but not too much that they rise too much. The box says cook for 15 minutes but since these are a lot smaller around 8 minutes is good or until golden brown.

TA DA! Mini corn dogs! They were a huge hit with the kids!

Berry and Peach Pie

 
Berry and Peach Pie
 
Ingredients:
  • 4 cups fresh peaches - peeled, pitted and sliced
  • 1 cup fresh raspberries
  • 3/4 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 (9 inch) pie crusts
  • 2 tablespoons butter, softened and cut into pieces
  • 1 tablespoon coarse granulated sugar

Directions
    1. Preheat oven to 400 degrees F (200 degrees C).
Place peaches and berries in a colander for about 15 minutes to drain any excess fluid , then transfer to a large bowl. Gently toss with sugar, flour, and cinnamon. Transfer to a pie crust. Dot with butter, and top with remaining crust. Cut vents in top crust, and sprinkle with coarse sugar.
    2. Bake 45 minutes in the preheated oven, until crust is golden brown.
Homemade Pie Crust:

Ingredients:

2 cups flour, sifted
1 teaspoon salt
2/3 cup shortening
5 -7 tablespoons cold water

Directions:
1. Put flour into a mixing bowl with the shortening

2. Using a butter knife, cut the butter into the flour about the size of a pea
3. add salt and water
4. Mix until dough is formed and knead. (Don't kneed it too much. Make sure it is still a bit sticky to the touch.)
5. Roll out on flat surface and cut in half. One is going to be flattened to be the bottom crust and the other cut into strips. You then are going to place the strips all one way until you cover the whole pie about an inch to half an inch apart. Then with more strips starting in the middle the opposite way weave them in and out and do them opposite every time. Make sure on the edges you press it down with a fork and cut off the excess dough. Add a little bit of sugar on top and Ta da!! A beautiful pie crust!
6. Bake at 375 degrees until golden brown!

 
 


           


 

Organizing School Lunches & Treats

IT'S SCHOOL TIME!! At times it is so frustrating to find healthy snacks that our kids will love and actually want to eat! Or when you do find one then they fight about who got more. Or...with my kids they eat only the chocolate M&M's and put everything back. LOL! I decided to be a little more organized and try to avoid these conflicts.
I buy these 1 lb boxes of chocolate and nut mixes or banana chips. There are a ton of different things to choose from depending on what your kids will eat. I buy them at Smith's for about $3.50.
I get out my 1/2 cup measuring cup and start pouring them into sandwhich bags that zip. That way no one can complain the other has more and you can also know how much of something they are eating AND most importantly in my home... they can't just eat the M&M's out of the entire box!! ;)
When they are all measured out and put in their ziplock bag then they go in a bigger ziplock bag to store. Ta da!! :)

Homemade Mozerella Sticks!

I am all about the easy recipes! I love making food with my kids and the easier it is the better for them to follow the directions as well! These turned out suprisingly SO GOOD!

String cheese chopped into bite size pieces, dipped in milk and bread crumbs, baked at 425 for 8-10 minutes- serve with marinara sauce! It's baked not fried!!

Ingredient list for Strawberry Banana Smoothie Recipe

10 oz fresh strawberries
2 ripe bananas
...
3 tablespoons honey
1 cup ice cubes
3/4 cup milk, yogurt (your favorite flavor)

How to make a strawberry banana smoothies:

 Wash strawberries
Remove banana peels
Add all ingredients in a blender, and process until smooth
 Add a few drops of vanilla or almond extract
